Although avocados are high in fat, keep in mind it is monounsaturated fat. These fats are known to lower your LDL’s (bad) cholesterol levels and this will in turn lower your risk of heart disease and stroke. Another great thing about them is they have a significant amount of fiber and this will help keep you full longer.

INGREDIENTS
- 2 Avocados
- 1/4 cup cornstarch or gluten free flour
- 2 teaspoons salt, divided
- 1 teaspoon pepper, divided
- 2 eggs
- 2 teaspoons garlic powder, divided
- 1/4 cup plus, gluten free dairy free bread crumbs (plain)
I choose to use cornstarch because it coats well and creates a crispier coating. I also intend on trying it with flour to see if I get a different texture.
TIP : Buy plain GF bread crumbs and season them yourself to ensure they do not contain dairy.
Preheat the oven to 400 degrees.
To get started making avocado fries, you need 3 bowls large enough to dip the pieces of avocado in. In one bowl add the cornstarch, salt, pepper, and garlic powder. Bowl two, add the eggs and beat. Bowl three, add the bread crumbs and the remaining spices.
Cut, peel and pit the avocados. Slice them into sections about 1/4 inch thick. Roll them in the cornstarch, dip in the egg, and then press them into the bread crumbs until coated.
Place a piece of parchment paper on a sheet pan. Then lay the avocado fries down and space them out. Drizzle with olive oil, flip and drizzle the other side with olive oil.
Place them in the oven for 15 minutes. Flip the avocado fries and cook for another 15 minutes. They will be a golden brown color when they are done. If they are not leave them in for a few more minutes.
