Looking for a new soup to try? I asked my mom for vegetables to make soup and she brings me cauliflower. Really? She asked, How about cauliflower soup. Ok, I’m game. I decided on Roasted Cauliflower Soup and I am glad I did.
My son loves soup, but he is not a fan of cauliflower due to the smell. Since I could not argue that fact, I had to find a way to make it smell appealing. I also wanted it to look aesthetically pleasing. Not an easy task, but I was up for the challenge!
INGREDIENTS
- 1 head of cauliflower
- 4-5 cloves of garlic
- 3 tablespoons of extra virgin olive oil
- 2-3 tablespoons of margarine
- 2 tablespoons gluten free flour
- 4 chicken or vegetable bouillon
- 3 cups water
- 1 cup almond milk
- salt
- pepper
- scallion
- sesame oil (optional)
There are a few steps to making roasted cauliflower soup.
Preheat the oven to 400 degrees
Break the head of cauliflower apart and spread it out in a single layer on a baking sheet. Take the whole garlic cloves and add them to the pan. Put the olive oil, salt, and pepper over the cauliflower and garlic then toss. Roast it in the oven for about 35-45 minutes. You want to be a beautiful golden brown color. Put this to the side.
In a large stock pot melt the butter. Once melted add the flour and use a whisk to make a roux. This will come together very quickly.
What is a Roux?
A roux is a combination of flour and fat mixed together to thicken a sauce. Sources of fat usually include butter, oil, bacon drippings, or lard. So a roux a merely a thickening agent used in soups, stews, gravy, and sauces.
Now that you have that under control, add the stock into the pot and stir to combine. Next, put the cauliflower and garlic into the pot and cook for 5 minutes.
Why do You Need to Puree the Roasted Cauliflower Soup?
You need to puree the soup to achieve a smooth creamy luscious texture. It can be done two ways. Option one is to use a immersion blender and option two is to use an actual blender. They both work, however, a regular blender does a much better job. I have tried it both ways and the regular blender allows for a much smoother texture. You don’t want to serve a gritty soup.
That being said, chose how you want to puree your soup and get started. Once you have finished pureeing the soup put it back into the pot. Check the seasoning and serve.
If you want to impress with your roasted cauliflower soup, you can add some scallions on top, or maybe some bacon bits. I added a little smidgen of sesame oil and some scallions.
