Broccoli Cheddar Soup is a great way to get your kids to eat their vegetables. It doesn’t look like a vegetable and it has cheese on top. Everyone loves cheese!
Now that winter is starting to set in it’s time to start making soup. The wonderful thing about soup is that you can enjoy a bowl right away, have some for leftovers. or, you can freeze it for later.
It doesn’t usually last very long in my house. We have it for dinner and then lunch the next day. Either way it just warms you from inside out, especially on a cold day. Some people say soup is a winter food, but it can be enjoyed any time of the year.
Time ti make some Broccoli Cheddar Soup.
INGREDIENTS
- broccoli
- 4 tablespoons margarine
- 1 small onion, chopped
- 1 stalk celery, chopped
- 5 tablespoons gluten free flour
- 4 cups gluten free chicken or vegetable broth
- 2 cups almond milk
- 1 bag gluten free dairy free cheddar cheese
Making Broccoli Cheddar Soup
In a soup pot add margarine, onion, and celery and saute until translucent.
Partially cook the broccoli in the microwave for about 3 minutes, just to soften it some. Then add it to the pot. Add in the flour and stir to combine. Add in the broth and the milk and stir. Cook for about 15 minutes and then puree the soup.
Optional: Add some cheddar cheese into the pot of soup and let it melt in.
Put the soup in a blender to puree. You will need to do this in batches. After you puree the soup dump it into another pot.
Tip: If you use a blender instead of an immersion blender it will come out smoother.
Ladle the broccoli soup into bowls, add some shredded cheddar cheese on top and serve. There you have it broccoli cheddar soup!
You can have it to start dinner or pair it with a sandwich.
