Vegetable Soup is loaded with goodness. Look at all those beautiful vegetables. It is colorful, smells amazing, and is loaded with nutrients. Now that winter is upon us it is time to start making soup. The wonderful thing about this soup is that you can put what ever vegetables you want in it.
I know kids are not always vegetable lovers. To make it more appealing to them you could add some fun shaped pasta. Tinkyada offers pasta in fun shapes that include animals, cars, planes, etc., they also have a tri colored pasta. Add their favorite vegetables and some shaped pasta for a nutritious meal.
I love vegetables, so I loaded this soup up with a colorful array of them. Ready to make some vegetable soup?
INGREDIENTS
- 3 tablespoons olive oil
- 1 medium onion, diced
- 1 clove garlic, minced
- 2 stalks celery, diced
- 1 cup carrots, sliced
- 2 cups potatoes, diced
- 1 can sweet corn
- 1 green zucchini, diced
- 8 oz. peas
- 1/4 cup red lentils (gluten free)
- 8 cups vegetable stock
- 6 oz. can tomato paste
- salt
- pepper
- Tinkyada gluten free dairy free pasta (optional)
Tip: I add red lentils for some extra nutrition. No one will even know they are in there because they break down during cooking. A great way for your kids to get some legumes in their diet!
Go to www.vitacost.com to purchase the red lentils. This is the only place I have been able to find red lentils that say gluten free on them. They are Vitacost brand.
To make vegetable soup, I start by cutting up all my vegetables first. In a stock pot heat the oil over a medium heat.
Once the pot is hot, add the onion, garlic and celery. Cook until tender, about 8 minutes. Now add the carrots, potatoes and a pinch of salt. Cook for 5 minutes.
Next, add the vegetable stock, zucchini, red lentil, corn, and tomato paste. Cook for about 20 minutes. Add the peas and cook for another 5 – 10 minutes.
Remove from the heat and season with salt and pepper to taste. You can also add a little fresh parsley on top.
Serve immediately.
