Since my cancer diagnosis plant based foods have become and remain a big part of my diet. I am 100% cancer free and intend on staying that way. Problem is I love hamburgers, steak, bacon and such. I started searching for alternatives that were close in flavor and texture. Beyond Beef Burgers were a great match to my demands. I made my family a plant based cheeseburger smothered with onions and mushrooms.
After my son ate the plant based cheeseburger I asked him, “How was your burger?” He said it was great and then I told him it was meatless. Hehehe! Much to my surprise he loved it. Since then I have made many variations and this mushroom, onion cheeseburger is just one of them.
The main reason I choose Beyond Beef’s plant based burger was because there are no fillers. They use pea protein, carrots, beets, etc. I know you’re thinking that they are probably dry, but the coconut oil keeps them moist. All good stuff. This is all part of my “staying cancer free diet.”
Now, are you ready to try a plant based cheeseburger?
INGREDIENTS
- Beyond Beef Burgers – plant based burger
- 1 whole onion, sliced
- 8 -10 mushrooms, sliced
- gluten free dairy free hamburger buns
- gluten free dairy free cheese (Daiya)
- salt
- pepper
- ketchup
You can cook these plant based burgers from frozen, which is absolutely fantastic, but I let them sit out for about 5-10 minutes. I have made them on the grill and in a cast iron pan. Either way they come out great.
While you are waiting for the burgers to soften slightly, slice your onions and mushrooms.
Heat a frying pan on a medium heat. I like to add a tablespoon of butter and a tablespoon of olive oil. Add the onions, mushrooms and a little bit of salt and pepper. Let them cook for about 10-15 minutes.
Heat the grill to 500 degrees or put your cast iron pan on a high heat.
While you are waiting for things to heat up, salt and pepper the burgers.
Once the grill is hot place the burgers on and time them for 5 minutes. They will appear to have juices rising to the top. Flip, salt them, add the cheese and go another 5 minutes. Your plant based cheeseburger is ready!
TIP: The reason for adding the cheese right after flipping is because it takes that time to actually melt. Dairy free cheese does not melt the same as regular cheese.
Put your buns on the grill or in the toaster during this 5 minutes.
Place the plant based cheeseburger on the bun and top it with onions and mushrooms. Now add ketchup or any sauce of your choice and sink your teeth into this amazing plant based cheeseburger.
