Making a delicious homemade egg salad is pretty simple. Sometimes the simple dishes are the hardest to get right. A good egg salad requires your eggs to be perfectly boiled. You can easily over cook the eggs and this will affect the taste and texture.
When I first made hard boiled eggs, my yolks would be green. It wasn’t until I did some reading that I found out why. They were simply overcooked, which causes the color change and a dry yolk. For homemade egg salad you want a beautiful yellow creamy yolk. Ultimately, it all comes down to timing!

INGREDIENTS
- 6 hard boiled eggs
- 1/4 cup mayonnaise
- 2 tablespoons spicy brown mustard
- 2-3 scallions
- salt
- pepper
- paprika
DIRECTIONS
- Put the eggs in a pot and cover with cold water one inch above the eggs. Turn the heat on high and let water come to a rolling boil, remove from the heat, cover and let stand for 10 minutes.
- When the 10 minutes are up, drain, then fill the pot with cold water. Dump and fill with water and ice. Let stand until cooled. Dry the eggs and peel.
- Take the yolks out of the whites, mash them up, then add the mayo, mustard, salt and pepper to taste.
- Add the diced egg whites and scallions, then stir to combine.
- Toast some bread or rolls, scoop in the desired amount, sprinkle some paprika over the top.
TIP: The best way I have found to make the perfect hard boiled egg is to bring them to a rolling boil, take the pot off the heat, cover the pot, let them stand for 10 minutes, then drain and cool them immediately.
