Potatoes come in a variety of colors and sizes. Today I am making stuffed purple potatoes. I choose to use purple potatoes because they are less starchy, they are loaded with nutrients and the color creates a beautiful presentation. What makes these potatoes extra special is that I grew them myself!
Stuffed purple potatoes make a great addition to any plant-based diet. A variety of vegetables or legumes can be used to add more nutrition to your meal. Use a variation of colored vegetables to benefit from the different antioxidants they offer.
Furthermore, you can add toppings like cheese, sour cream, or even chives. Make your potato appetizing and palatable by adding spices. No one likes a bland potato.
Benefits of Purple Potatoes
Aside from the fact that purple potatoes taste awesome, they hold many benefits. To start, their purple pigment is due to anthocyanins. Anthocyanins are antioxidants that can help to reduce inflammation in the body. Inflammation leads to chronic disease, so it would be beneficial to add them to your diet.
In addition, they contain fiber, vitamin C and potassium to name a few. They are lower on the glycemic index than some other varieties. Equally important, the nutrients are found in the skin and flesh of the potato as well.
Reap the benefits purple potatoes have to offer. Their anthocyanins include benefits for blood pressure, cancer protection, and fulfilling your fiber quota.
INGREDIENTS
- 2 Purple potatoes or another kind
- 8 small mushrooms, bella or button
- 1/4 – 1/2 cup of spinach
- 1 cup of eggplant, diced
- salt to taste
- pepper to taste
DIRECTIONS
- Cut a slit in the potato, flip and cut a slit on the other side. Put in the microwave for 7 minutes to start. Check to see if it needs more time.
- Heat a small amount of olive oil over medium heat.
- Slice the mushrooms, dice the eggplant, then add to the pan. Add some salt and pepper to taste.
- Cut potatoes in half, let them cool slightly, then scoop out the inside leaving a 1/4 inch border. Put the extra potato aside.
- Salt the inside of the potato then add a heaping scoop of vegetables in the potato.
- Top the potato with anything you like such as, cheese, sour cream, or chives.
Being a cancer survivor, I am also looking for foods that are colorful and offer anti-inflammatory effects. Purple potatoes are just one of the many foods you can incorporate into your diet to help stave off chronic disease.
