Gluten Free Dairy Free Chocolate Chip Pancakes
INGREDIENTS
- 1 1/2 cups gluten free flour
- 1 tablespoon gluten free baking soda
- 5 tablespoons sugar
- 1 teaspoon xanthan gum
- 2 eggs
- 1 1/4 cup almond milk
- 4 tablespoons margarine melted (smart balance)

Heat up your pan on a medium high heat and add a little oil. Cast iron pans work well for making pancakes. Let’s make some gluten free dairy free chocolate chip pancakes.
First, combine your flour, baking soda, xanthan gum, and sugar. Next, you will want to add in your chocolate chips so they get coated with the flour. You really want to do this because it will keep them from sinking to the bottom of the mix. In a separate bowl mix together your eggs, almond milk, and melted margarine.
Now you can pour the wet ingredients into the dry mixture and stir. It is ok to have some lumps, you don’t want to over mix the batter. Once your pan is hot you can pour your mix into the size pancake you would like. Young kids like the half dollar size pancakes because they are easy to eat. Toddlers can use their hands to eat them!
How will you know when they are ready to flip? Your pancakes will get bubbles and become dry around the edges. Once this happens you the pancakes are ready to flip. They should be a nice golden brown color.
