It’s time to make some gluten free dairy free cheesy grits!
People have told me grits are tasteless and terrible. I tell them that’s because you are not making them right. You need to season your food. Of course it is going to be tasteless if you don’t use any seasoning. You can’t just boil them and throw them on the plate. This goes for any food, not just grits. Grits need salt and butter, but I find that cheese puts them over the top! You can add American, Cheddar, Swiss or any other cheese. There are so many great choices.
Grits are a versatile food. You can use them for breakfast, lunch, or dinner. For breakfast you can exchange them for potatoes. You can also use grits instead of rice or pasta. My family is always looking for new ways to make recipes.
Cheesy Grits with shrimp is a fabulous dinner. You have a plateful of smooth, creamy, cheesy grits on the bottom and then you can put beautifully seasoned shrimp on top. It doesn’t sound like much, but it is delicious. My son asked me to make grits one day and I have been hooked ever since.
Cheesy grits are great next to some eggs and bacon as well. Crumble some bacon into the grits if you want to.
First add about 2 teaspoons of salt to 1 cup of water and bring it to a boil. When the pot comes to a boil add in 2 cups of grits. Don’t forget grits will double just like rice does. Turn the heat down to a simmer, cover the pot and continue cooking for 5-7 minutes. Stir the grits occasionally. Add some butter and how ever much cheese you like.
