Gluten Free Dairy Free Potato Skins are a great appetizer or you can use them as a side to your entree. Some people like to call them spuds. They are super easy to make and not very time consuming. I made these for New Year’s Eve and no one knew they had dairy free cheese in them. They are one of my son’s favorite things. He would eat potatoes at every meal if I let him. They also have an added bonus because they have bacon in them and sour cream.
INGREDIENTS FOR POTATO SKINS
- 4 large potatoes
- margarine (smart balance)
- gluten free dairy free cheese (Daiya)
- 4-6 slices gluten free bacon
- gluten free dairy free sour cream (wayfare)
The first thing you need to do is cook the potatoes. Put slits in the top of the potatoes and cook them in the microwave like you are making a baked potato. Cut the potatoes open and let them cool for about 15 minutes.
While you are waiting for the potatoes to cool, you can start on the bacon. Cook the bacon until it is crispy and you will be able to crumble it. When the bacon is done, drain it and let it cool so you can crumble it.
Also, get started on melting the cheese. I usually add a little almond milk to the cheese to keep it smooth and creamy. The Daiya cheese melts similar to Velvetta cheese and has a great flavor. You can melt it in a measuring cup in the microwave or in a small pot on the stove top.
Heat the broiler to high. Once the potatoes cool you need to scoop out the inside, but leave a small amount of potato around the skin. Now smear margarine around the inside of the potato. Placed the potatoes on a an oven safe tray and put them under the broiler until they brown. They should look like this.
Now it is time to assemble the potato skins. Simply pour the melted dairy free cheese into each shell. Top the cheese with the crumbled bacon. Serve the potato skins with gluten free dairy free sour cream.
