Today I am making sauteed spinach with bacon and onions. Spinach is one of my favorite vegetables because it is versatile and healthy. It can be used as a side dish or you can incorporate it into your main meal.
This cool season vegetable is very easy to grow. It has a sweeter flavor when you grow it yourself, and you will appreciate the taste. You want to pick it when it is small and tender to get the best flavor.

INGREDIENTS
- bag of spinach
- 1/2 onion, diced
- 4 slices of gluten free bacon
- 2 tablespoons extra virgin olive oil
You want to use a big frying pan, so you can fit the whole bag of spinach.
Put the olive oil in the pan and add the bacon. Cook the bacon until crisp, drain it on a paper towel, and set aside.
Leave just enough bacon grease in the pan to cover the bottom. Add the onion to the pan with the bacon grease and saute until they are translucent.
Dump in the bag of spinach and stir. It will cook down quickly. It will take about 2 minutes to wilt. Take it out of the pan so it does not continue to cook.
