I grew up on the Jersey shore and fresh seafood was always available. You could get shrimp, scallops, clams, mussels, crab, lobster, and a large variety of fish. You can’t beat fresh seafood from a fish market. They get their seafood fresh daily and it is always delicious.
When I was younger my dad would take us crabbing and fishing. It was both fun and relaxing. The day would fly by so fast and we had so much fun doing it. It is rewarding to catch your own food as well.
I currently live in PA and can only get seafood at the grocery store. Don’t get me wrong, the seafood is still good, but there is just something about a fish market.
INGREDIENTS
- 20 shrimp ( other seafood)
- 4 pieces gluten free bacon
- 2 cloves garlic minced
- 1/2 bag spinach
- olive oil
- 1 tablespoon gluten free flour
- 2 tablespoons gluten free dairy free margarine
- rice
- salt
- pepper
Let’s get started on the shrimp, spinach and bacon mixture. Heat a pan on medium heat. Cut the bacon in to 1/2 inch pieces and cook until crisp. Remove the bacon from the pan and drain it on a paper towel.
If you use the rice you boil in a bag, it will take 10 minutes to cook in the microwave. Put it in the microwave and get it started now.
Put about 1 tablespoon of olive oil in the pan. Mince up the garlic and saute for about 1 minute. Next add the margarine and the shrimp or other seafood. Cook for 3 minutes, flip the shrimp and cook another 3 minutes. Throw the spinach in and stir up. Get the rice out and drain it. The shrimp mixture should be done as you only want to wilt the spinach.
Put down a bed of rice and then the shrimp, spinach and bacon mixture over it.
