If you like garlic, this Gluten Free Dairy Free Garlic Bacon Dip is for you. I just made this dip for New Year’s Eve and it was huge hit.
INGREDIENTS
- 1 1/2 cups gluten free dairy free sour cream
- 3/4 cup mayonnaise
- 5 tablespoons gluten free dairy free horseradish sauce
- 4 slices of gluten free bacon
- 2 heads of garlic roasted
- 3 cloves raw garlic chopped
- 4 scallions
- 1 tablespoon chives
- salt
- pepper
Garlic Bacon Dip directions
Take the two heads of garlic, cut off the tops, drizzle with olive oil and put them in a 350 degree oven until they are caramelized, about 45 minutes.
Next, get a skillet and place 4 -5 slices of bacon and cook until they are crispy, so you can crumble them into the dip later. When the bacon is done drain it on a paper towel and let it cool.
Once the garlic has caramelized take it out and let it cool for about 15 minutes. Squeeze the garlic pulp out of the skin into a bowl. Next, add the gluten free dairy free sour cream, mayonnaise, horseradish.
Cut the ends off the scallions and then cut them into 1/4 inch pieces. Next, smash the garlic as this makes them easy to peel and it also makes it more aromatic because it releases the oils. Mince the other 3 cloves of garlic and add both the garlic and scallions to the bowl. Add salt and pepper to taste and mix well.
To finish off the garlic bacon dip crumble some of the bacon and mix into the dip. Take the rest of the bacon and crumble it over the top and then add some chives to the top.
It take a little time to roast the garlic and cook the bacon, but assembling the dip does not take long at all. Put the dip in a bowl and serve with crackers, raw vegetables, bread, or tortilla chips.
