There is nothing better than a bowl of rich creamy Homemade Potato Soup on a cold winter day. This soup is mainly potatoes, milk, broth and some seasoning. It can be enjoyed as an appetizer or a full meal because it’s so hearty. Mashing the potatoes produces a thick and chunky soup that will leave you yearning for more.
Homemade Potato Soup is comforting because it fills you with warmth. It has a beautiful creaminess, but also a thick and chunky texture because there are some whole potatoes in there. You can elevate it by putting scallion on top and maybe some extra cheese. We all know cheese makes everything taste better!
TIP: Normally, the onion is sauteed in bacon grease. I replaced the bacon grease by using 1 tablespoon of oil and 5 tablespoons of margarine. This helps give a fatty rich flavor to the homemade potato soup.
INGREDIENTS
- 3 lbs Yukon gold and purple potatoes, chopped (grown in the garden)
- 2 onions, chopped
- 2 cloves garlic, minced
- salt
- pepper
- 1 tablespoon olive oil
- 5 tablespoons margarine
- 3 tablespoons gluten free flour
- 4 cups vegetable broth
- 1-1 1/2 cups unsweetened almond milk
- 1 cup gluten free dairy free sour cream
- scallion, to top the soup
- 1 bag of gluten free dairy free finely shredded cheddar – Follow Your Heart
DIRECTIONS
- Warm Dutch oven over medium high heat. add the oil and margarine and melt.
- Add the onions and garlic, then cook until tender, about 4-5 minutes. Next, add flour, salt and pepper, and stir to combine. Cook for a couple of minutes, then add the broth and milk. Whisk to get rid of any lumps of flour.
- Put in the chopped potatoes and cook over a medium heat for 10 minutes or until tender.
- Use a potato masher to break up the potatoes. This will leave some chunks and create a thick and chunky soup.
- Add the sour cream and cheddar cheese, then stir to combine. When the cheese is melted it’s ready to serve.
- Add some scallions on top of the homemade potato soup and serve.
TIP: Mashing some of the potatoes gives the potato soup a thick chunky texture.
The great thing is homemade potato soup can be enjoyed any time of the year. It can be an entire meal or an appetizer. This is definitely one soup everyone should try making from scratch.
