What can you do with your leftover mashed potatoes? There are lots of ways to enjoy them I’m sure, but today I am making potato pancakes. My kids love potatoes and are more than happy to eat them every day.
Instead of just heating up the mashed potatoes I decided to recreate them into potato pancakes. We often have potatoes for breakfast anyway, so this was a change from simple fried potatoes.
If you don’t have leftover mashed potatoes, make some. All you need to do is put on a pot of water, add some peeled potatoes, and some salt. Bring the potatoes to a boil and cook until they are soft.
I like to use a potato masher to smash the potatoes. Add some margarine, salt, and almond milk until you get the consistency you want. You do want them to be slightly stiff so you can mold them into patties for your potato pancakes.
INGREDIENTS
- leftover mashed potatoes
- gluten free flour for coating
- salt
- pepper
- 2 plus tablespoons gluten free dairy free margarine
- scallions
- gluten free dairy free cheddar cheese, shredded
Making Potato Pancakes
Heat a frying pan with margarine. Make the potatoes into round patties about the size of a hamburger. You may have to add a little milk to the potatoes if they are too thick.
Put the flour in a plate with salt and pepper. Coat the potato pancakes with flour, put them into the pan and cook for 8-10 minutes or until crispy and golden brown. Flip them and cook another 8-10 minutes.
Once both sides of the potato pancakes are crispy and golden brown put them on a plate, top with shredded cheddar cheese and scallions.
The best part is you can serve them with breakfast, lunch, or dinner. If you like potatoes, you are going to love these potato pancakes.
