While getting Chemotherapy a lot of foods either smell horrible or you just cannot taste them. Some days meat is a no go. I am constantly looking for filling vegetable options for a meal. Thankful for me I love vegetables. You need optimal nutrition at this time in your life and vegetables are packed with vitamins, minerals, and antioxidants. Just don’t forget to incorporate protein in some way. There are several vegetarian choices. Here I simply took some leftover vegetables and made a soft breakfast taco.
I was surprised at how satisfying a breakfast taco with only vegetables could be. Although, I did have black beans and avocados which are both filling because of their fiber content. My son even thoroughly enjoyed these soft breakfast tacos. He said, “We need to make these again. They were way too good.”
INGREDIENTS
- gluten free dairy free soft taco shells (Mission)
- black beans
- colored bell peppers, diced
- onion, diced
- 1 avocado, diced up
- salt
- pepper
Keep in mind the ingredients for my soft breakfast tacos were just leftovers, you can use whatever vegetables you wish. You have virtually thousands of combinations.
Since my vegetables were already cooked I put them into a pan to warm them up. If you have raw vegetables put them in a pan and cook until soft. Add some seasoning and they are ready.
Get your tortilla shell ready by either crisping it up in a pan or put it in the toaster.
Put the tortilla in a plate, add the vegetables, and place some diced avocado on top.Avocados are bland so I add a little salt on top. You can add cheese or sour cream if you wish as well. It is totally up to you what you want in your soft breakfast taco.
