It was almost Christmas and my son wanted to make sugar cookies. We were not at home and had no cookies cutters, so it was time to get creative. So we decided to make filled sugar cookies.
Here is what we did. Take one shot glass and one large glass. We cut out one piece with the large glass and then took the shot glass and cut out the middle. Then we took one solid round circle, spread a layer of jam across it, and then put the open circle on top. We also used the small middles that we cut out by spreading chocolate in the middle of two cookies.
INGREDIENTS
- 1/3 cup of margarine
- 1/2 cup of crisco
- 2 cups gluten free flour
- 1 egg
- 3/4 cup sugar
- 1 tablespoon gluten free dairy free milk (almond milk)
- 1 teaspoon gluten free baking powder
- dash of salt
- 1 teaspoon gluten free vanilla
- gluten free dairy free chocolate chips (enjoy life)
- gluten free fruit spread or jam
- 1 large glass for cutting a big cookie
- 1 shot glass for cutting out the center
Preheat the oven to 350 degrees
Now, let’s make some filled sugar cookies.
Beat the margarine and shortening with an electric mixer on a medium for about 1 minute. Add half the flour, egg, sugar, milk, baking powder, and salt. Beat these ingredients together until the mixture is combined. Next, add in the remaining flour and beat until it is thoroughly mixed together. Divide the dough in half, cover it with plastic wrap and put dough in the refrigerator. Let the dough chill for at least 1 hour.
Place the dough on a floured cutting board. Roll the dough to about 1/4 in thickness. Take the large glass and cut out several cookies. Now take the shot glass and cut out the center. Put all the pieces on a cookie sheet and bake 8-10 minutes or until slightly brown. I had to cook them for 13 minutes in my oven, so adjust accordingly.
Once the cookies are done baking, put them on a cooling rack for 20-30 minutes. When you are close to the 30 minute mark put some chocolate in a measuring cup with 1 tablespoon of margarine. Microwave on high at 30 second intervals and stir after each one.
Making the Chocolate Filled Sugar Cookies
First, you need to take a solid cookie, spread melted chocolate on it, and then put a cookie that is cut out on top of that. Let the chocolate harden up and then you can enjoy!
Making the Fruit Filled Sugar Cookies
First, you need to take a solid cookie and spread the fruit spread or jam on it, then lay a cookie that is cut out on top. This one does not need to dry so you can sample it right away.
I took two center pieces and spread melted chocolate in the middle to make a sandwich. You can take a single center cookie and dunk it in melted chocolate. I also spread chocolate in the middle of some and then dunked them in chocolate. Maybe a little over the top, but they were yummy! Besides, they were for the holidays.
