Chocolate Avocado Pudding will blow your taste buds away. This dessert is smooth, creamy and decadent. Furthermore, it only has six ingredients and can be whipped up in minutes. As a result you can have this amazing dessert on the table in no time at all. I have tested this recipe on my church group on more than one occasion and it was a hit.
When you have dietary restrictions it’s hard to find desserts that look and taste great, but this one is a definite winner. In addition, it’s a healthier version of pudding due to the fiber and healthy fat content of the avocado. Even better, there are no preservatives. Most importantly, the recipe is gluten free, dairy free and vegan.
Why is the Fat in Avocados Good For You?
Avocados are high in unsaturated fats, mainly monounsaturated, which are actually beneficial to your health.
Additionally, they are packed with nutrients that can help with digestion, bone loss, cancer, and heart health to name a few.
INGREDIENTS
- 2 ripe avocados
- 1/4 cup GF cocoa
- 1 teaspoon vanilla
- 1/4 cup plus agave, or maple syrup
- canned coconut milk, liquid only
- pinch of salt
DIRECTIONS
- Cut and peel the avocados and place into a food processor, then blend until you have a smooth consistency.
- Add the cocoa, vanilla, agave and salt then blend for another minute.
- Pour some of the coconut milk into the mixture while blending. Keep going until you have the consistency you desire.
- Taste the pudding and add more sweetener and coconut milk if needed.
- Refrigerate until you are ready to serve.
Your family and friends will be surprised when you tell them it’s made with avocado. Serve this amazing dessert by itself or with whipped cream and fruit. Either way everyone will leave wanting more chocolate avocado pudding.
