Pumpkin bread and muffins make a great snack or dessert. Pumpkin is very healthy, however this recipe has quite a bit of added sugar. I make muffins or mini bread loaves to keep the portion small, so as not to eat too much. The addition of pumpkin seeds adds texture and nutrition.
This is my mom’s recipe and I have been using it to make pumpkin bread and muffins for several years. It always comes out terrific and the recipe works great with gluten free flour as well.

I usually make large muffins or large loaves of pumpkin bread. Today I am making mini pumpkin bread loaves, small muffins and large muffins. Leave out what you want and freeze the rest. You can take out one muffin at a time. Individual mini loaves just scream fun anyway!
INGREDIENTS
- 1 can 100% pumpkin – 1 lb 13 oz.
- 3 cups sugar
- 3 1/2 cups gluten free flour
- 1 cup of oil
- 2/3 cup water
- 4 eggs, room temperature
- 1 1/2 teaspoons salt
- 2 teaspoons gluten free baking soda
- 1 teaspoon xanthan gum (only if it is not already in your flour mix)
- margarine to grease pans
- pumpkin seeds (Certified gluten free)
SPECIAL INSTRUCTIONS: MIX BY HAND
Now it is time to make these delightful mini pumpkin bread loaves and muffins.
The first thing you need to do is preheat the oven to 350 degrees.
In a large mixing bowl add your dry ingredients and mix together. Now add the oil, water, eggs, and pumpkin. Mix thoroughly, but don’t overmix.
Grease your loaf and muffin pans with margarine. Fill the mini loaf pan about 3/4 of the way. Fill the muffin pan 3/4 of the way as well.
Add pumpkin seeds over the mini pumpkin bread loaves and muffins. You don’t have to do them all. Place them in the center of the oven and bake.
The mini pumpkin loaves take about 25 minutes to bake. The small muffins take about 30-35 minutes to bake and the large muffins take about 40-45 minutes to bake. If you are making a large pumpkin bread loaf it takes about 1 hour and 15 minutes to bake.
Set the timer and then check your pumpkin treats by putting a toothpick in the center. If it comes out clean they are done. Put them some where to cool off.
I like to take my pumpkin bread or muffin, toast it, and then butter it.
