I wanted cookies, my son wanted ice cream, so we made a sugar cookie sundae. Cookies, ice cream, coconut whipped topping and fruit, yum! We made several versions and all were equally delicious.
We made different versions of a sugar cookie sundae every night. The first version was a sugar cookie, a layer of whipped topping, strawberries, another sugar cookie, more whipped topping and a strawberry on top. (Top right). The second version was a sugar cookie topped with ice cream, whipped topping, and finally blueberries (Left side). The last version was sugar cookies topped with ice cream, a layer of whipped topping and strawberries. (Bottom right)
I am using a chewy sugar cookie to make the sugar cookie sundae, but I am sure any cookie would work to make this dessert.
INGREDIENTS
- 2 1/2 cups gluten free flour
- 1/2 teaspoon baking powder
- 1 teaspoon vanilla extract (gluten free)
- 1/2 plus another 1/8 if needed teaspoon xanthan gum (only add if it is not in your flour mix)
- 1 1//2 cups sugar
- 1/2 teaspoon salt
- 1 cup margarine – gluten and dairy free
- 1 egg – room temperature
INGREDIENTS FOR THE SUNDAE
- gluten free dairy free ice cream of your choice
- fruit- blueberries, strawberries, peaches, etc.
- coconut whipped topping (SO Delicious)
If you are ready to make a sugar cookie sundae let’s get started. Preheat the oven to 375 degrees and line a sheet pan with parchment paper.
In a large bowl whisk together the flour, baking powder, salt and xanthan gum (if necessary).
In a mixing bowl beat the sugar and margarine until fluffy. Next, add the vanilla extract and the egg. Beat to incorporate.
Spread the sugar cookie mix out onto the sheet pan lined with parchment paper to make one big rectangular cookie. Try to make it the same thickness, so it all cooks evenly. For a little added texture and crunch you can add some big sugar crystals over the top. I used sugar in the raw.
Put the the cookie in the oven and cook for 15 minutes or until it is golden around the edges. Insert a toothpick to see if it is done. If it comes out clean you are good!
Take the cookie out of the oven and let it cool for at least 15 minutes. I know it is a long time, but it is worth the wait. You don’t want the cookies to crumble.
Putting Together the Sugar Cookie Sundae
When the sugar cookie has cooled, cut it into squares, about 2 inches by 2 inches. Now it is time to make the sugar cookie sundae of your dreams.
Put one or two sugar cookies on a plate, top with your favorite ice cream, then add a layer of whipped topping, and finally add your favorite fruit. You can also put one sugar cookie, then whipped topping, some fruit, another cookie more whipped topping and more fruit.
You could add nuts, sprinkles, chocolate chips or any other topping you wish.
