Grilled Acorn Squash is an amazing way to cook this beautiful vegetable. Acorn squash can be baked, sauteed, steamed, or stuffed. Grilling this squash gives a little bit of that fantastic smokey grilled flavor. It is a dense vegetable so it holds up well to grilling.
What are the Benefits of Acorn Squash?
Acorn squash is high in fiber, low in calories, and rich in vitamins and minerals. Winter squash, such as acorn, butternut, and spaghetti squash are starchy carbohydrates, so eat them in moderation. The flesh and the flowers of the squash are both edible. This incredible vegetable is known to boost the immune system, improve vision, protect the skin, strengthen the bones, reduce blood pressure, maintain fluid balance, regulate blood sugar and cholesterol, improve digestion, and proper circulation.

Acorn Squash gets a beautiful flavor when you grill it. Let’s make some grilled acorn squash. Preheat the grill to around 350 degrees.
Cut the acorn squash in half and clean the seeds out of the center. Lay it down skin side up and cut it in slices. Brush both sides with olive oil. Add salt and pepper.
Place the acorn squash on the grill and cook for about 10 minutes per side. Grill it over the flame to get some marks and then finish over indirect heat, so they don’t burn. They should be tender, but not fall apart when poked with a fork.
If slicing the acorn squash sounds like to much work, you can also cut them in half and cook them that way. You oil or butter the inside, season the squash with salt and pepper, and lay them on the grill. I have also cooked them inside a tin with water to steam them on the grill. You still get that awesome grilled flavor.
