Meatless Sausage and Potatoes makes a fantastic vegetarian meal. This meal is based off of a recipe for Sausage and Peppers, but since I do not really like bell peppers too much I swapped them out for potatoes.
Since I cannot eat pork anymore I am very thankful that I found a comparable alternative. The meatless sausage from Beyond Meat Inc. has a great flavor. http://beyondmeat.com
If meatless sausage and potatoes is not your thing, by all means you can make this recipe with regular sausage if you prefer. The flavor of the sausage cooks into the potatoes and gives it fantastic flavor.
This can be made on the grill or in the oven, which ever you prefer. Either way I put all the ingredients in a pan, put it in the oven or on the grill and let it cook.
TIP: Don’t put the sausage in until the last 10 minutes, if you are using meatless sausage. It cooks very fast and you do not want to dry it out.
INGREDIENTS
- 1 package of beyond sausage
- red, blue and yellow butter potatoes
- 1 medium onion, sliced
- package gluten free dairy free mozzarella cheese (daiya shredded mozzarella)
- 2 cloves garlic, minced
- olive oil to coat
- salt
- pepper
Potatoes: You can use whatever kind you like, but the variety of potatoes gives the dish beautiful color. Remember your eyes see the food first, so it needs to look appealing.
Preheat the oven to 375 degrees and line a rimmed sheet pan with foil.
Cook the potatoes and onions for about 20 minutes. Pull it out check the potatoes, if they are soft then add the sausage and mix thoroughly. Put it back into the oven for 5 minutes. Then add the cheese over the top to melt and put it back in for another 5 minutes.
Mix it up your meatless sausage and potatoes and check your seasoning. All you have left to do is serve your meal!
