Today I am going to show you how to make a delicious gluten free dairy free Chicken Parmesan with a side of pasta. I was upset when I found out I couldn’t eat cheese anymore. How can you have Italian food without cheese? It turns out you can with Daiya Mozzarella Cheese.
About a year ago I started making sauce from scratch. Today I needed a quick sauce, so I used canned tomatoes. I will post the sauce from scratch later. There is nothing like it. Once you make the sauce from scratch you will not want to use anything else. Furthermore, it is very simple to make.
INGREDIENTS FOR SAUCE
- 1 tablespoon olive oil
- 2 cloves garlic chopped
- 1 tablespoon parsley
- 1 tablespoon basil
- 1/2 medium onion
- 1 tablespoon oregano
- can crushed tomatoes
- 1 tablespoon tomato paste
- 1 tablespoon sugar
I usually make the sauce first, so I can let it simmer while I make the chicken. Start by putting the olive oil in a 6 quart pot. Next, put in the onion and garlic and cook until the onion is translucent. This should take about 5-10 minutes. Add the crushed tomatoes, tomato paste, sugar, basil, oregano, parsley, and stir to mix.
INGREDIENTS FOR CHICKEN PARMESAN
- chicken cutlets
- 1/2 cup gluten free flour
- 2 eggs
- 1 tablespoon oregano
- 1 tablespoon garlic powder
- 1/2 cup gluten free dairy free bread crumbs – plain
- 1 tablespoon parsley
- 1 tablespoon basil
- salt and pepper
- gluten free dairy free mozzarella cheese
- gluten free dairy free pasta
- canola oil
Let’s make some Chicken Parmesan
Put the gluten free flour into one bowl, the eggs in another bowl and scramble them, then put the breadcrumbs into another bowl and add the seasoning. I buy plain breadcrumbs because the seasoned ones have milk in them. Next, put enough oil in a frying pan to coat the bottom and heat up over a medium high heat. Also, heat your oven to 350 degrees. Put on a pot of water and bring to a boil for the pasta.
Start by dredging the chicken in flour because this helps the egg stick to the chicken. Next, put the chicken in the egg and coat it, this will help the breadcrumbs stick. Then, coat the chicken with the breadcrumb mixture. Put the pasta in the boiling water and follow directions on the box. Place the chicken in the pan of hot oil and cook about 5-7 minutes on each side. Take the chicken out and drain on paper towels. You are now ready to assemble the Chicken Parmesan.
Dump excess oil out of the frying pan and place chicken back in the pan. Spoon sauce over top of each piece of chicken. Spread shredded mozzarella cheese over the top and put it in the oven for about 5 minutes to melt the cheese. Next, drain the pasta, put a serving in the plate, and top with sauce. Take the chicken out of the oven, place one piece in each dish, and serve. Finally, it is time to enjoy the Chicken Parmesan!
