This sausage and pasta dish is made with a meatless sausage by Beyond Meat Inc. You can absolutely make it with regular sausage, my body just will not tolerate pork anymore. Either way it’s delicious! The sauce is made from scratch, which puts this meal over the top.
Scratch Pasta Sauce v.s. Jarred Pasta Sauce
When it comes to sauce or gravy as some people call it, I prefer homemade. I’m not knocking those of you who use jarred sauce. Some people don’t have the time to make homemade sauce and others are afraid to try making sauce because it seems intimidating.
I used to make homemade sauce with a can of crushed tomatoes, until I tried making it with fresh Roma tomatoes. You just can’t beat the fresh, robust tomato flavor. The smell of the tomatoes and fresh spices are absolutely heavenly. There is nothing like it.
INGREDIENTS
- 30 – 40 fresh Roma tomatoes (cut in quarters)
- 4 small cans tomato paste
- 2 cloves garlic, minced
- 1 -2 tablespoons olive oil
- 1/2 onion, diced
- 1 teaspoon baking soda
- 1 plus tablespoons sugar (depending on the sweetness of the tomatoes)
- parsley
- basil
- oregano
- gluten free dairy free parmesan cheese (sprinkle on top)
- 1 package Beyond Sausage
- 1 lb of gluten free pasta (Tinkyada)

Now that you have decided if you want scratch made sauce or jarred sauce, let’s get down to business. Making meatless sausage and pasta with scratch made sauce is easier than you think.
First, get all of your ingredients together. I have bunches of parsley, oregano, and basil on my cutting board. You will also need about 30-40 Roma tomatoes and some sort of blender.
Cut off the tops of the tomatoes, quarter them, put them in a blender and puree. Remove the spices from the stems and give them a rough chop.
In a pot add olive oil, diced onions and garlic, cook for 4-5 minutes. Next, add the fresh tomatoes, tomato paste, spices, sugar baking soda. Let the sauce simmer for about an hour.
In a separate pan cook the meatless sausage for about 8-10 minutes and then put it in the sauce. This will add extra flavor to your sauce.
When the sauce has been cooking for about 45 minutes, put on a pot of salted water for the pasta. Bring the water to a boil, add the pasta and cook to directions on the package.
When the pasta is al dente drain it, rinse it, and put in a serving dish. Top the pasta with some sauce, sausage and finish with parmesan cheese.
