I had left over pasta and my son needed lunch. So this recipe of cheesy pasta with ham and mushrooms became a thing.It wasn’t a recipe that took a lot of thought. I just looked to see what I could pair together to make something that taste good.
This recipe was simply a left over mash up. Left overs can be a great thing. You can usually take what you have and create another meal so you don’t feel like you are eating the same thing.
Sometimes it is a matter of using up what is in the refrigerator. I hate to throw away food. One, it cost too much and two, I think of all the people out there who don’t even have food to eat.
INGREDIENTS
- gluten free dairy free elbow pasta
- 5 slices of ham
- mushrooms
- gluten free dairy free mozzarella cheese (you decide how much)
- 1 tablespoon gluten free dairy free margarine
- salt
- pepper
I already had the pasta made so I was able to skip that step. However, if you don’t have any pasta made, it doesn’t take long to boil some up.
What goes well with pasta? Cheese of course! From there you can be creative. What are your favorite vegetables? Do you want to add meat? You want it to be quick so maybe ham, proscuitto, or maybe left over ground beef.
All you need to do is cut the sandwich meat up into small pieces. Then slice the mushrooms. Put them in a pan together with some margarine and cook for about 10 minutes. Add a little salt and pepper to taste.
Now add the pasta and the cheese. Stir everything up and let the cheese melt. Your cheesy pasta with ham and mushrooms is ready to eat.
You can add anything you want to the pasta and cheese. If you don’t like meat add vegetables.
