HOMEMADE MEAT SAUCE
INGREDIENTS
9 lbs of Roma tomatoes
2 12 oz cans of tomato paste
1 tablespoon gluten free baking soda
3 cloves garlic
1 tablespoon basil
1 tablespoon parsley
1/2 onion
1 tablespoon oregano
3 tablespoons olive oil
Make the sauce. Get a 6 quart stock pot and put in 3 tablespoon of olive oil. Dice the onion and garlic, put them in the pot, and cook for about 4 minutes. Cut the ends off the tomatoes and then cut them in four pieces. Put the tomatoes into either a ninja or blender for about 1 minute to liquify. Add the tomatoes and gluten free tomato paste to the pot. Measure and add the basil, oregano, and parsley. Put in 2 tablespoons of sugar. Add about 1 tablespoon of gluten free baking soda. Simmer on a low heat for a couple hours to cook it down and get the meat flavor thorough out the sauce.
Gluten Free Dairy Free Meat Lasagna
INGREDIENTS
1 lb sausage
6 meatballs
1 package gluten free lasagna noodles
(2) 8 oz. containers gluten free dairy free ricotta
4-5 oz. gluten free dairy free mozzarella
3 oz gluten free dairy free Parmesan cheese
1 teaspoon parsley
3 eggs
preheat oven to 350 degrees
In a medium sized bowl mix together the gluten free dairy free ricotta, gluten free dairy free Parmesan cheese, gluten free dairy free mozzarella cheese, eggs, parsley, salt and pepper.
In a 9 x 11 pan spread a layer of meat sauce. Put down a layer of noodles. Spread a layer of the gluten free dairy free ricotta mixture. Next put a layer of crumbles sausage and meatballs. Put another layer of sauce on top of this. Repeat the layers 2 more times. On the final layer add more gluten free dairy free Parmesan cheese to top it off.
Put the meat lasagna in the oven for 45 minutes and then let it cool for about 15 minutes.
