INGREDIENTS – STUFFED PORTOBELLO MUSHROOMS
- Portobello mushroom caps
- 3/4 to a whole bag spinach
- 3 cloves garlic
- gluten free dairy free mozzarella cheese
- 4 tablespoons margarine
- 4 tablespoon olive oil
- 1 cup gluten free dairy free bread crumbs
- salt
- pepper
Preheat the oven to 375 degrees. Get a pan ready for the oven by lining it with foil or parchment paper.
Let’s get started on making some stuffed portobello mushroom caps.
The first thing I do is scrape out the gills on the underside of the portobello mushrooms and wipe off any visible dirt. Next, heat up a pan with 2 tablespoon of olive oil. Put the spinach in the pan with 1 clove of chopped garlic. Cook this for about 3-5 minutes as you only want to wilt it. Once the spinach is wilted take it out of the pan and split it between the mushroom caps.
The next step is to put a layer of mozzeralla cheese on each portobello mushroom.
Put 2 tablespoons of olive oil and 4 tablespoons of margarine in the pan. Next, add 2 cloves of chopped garlic, breadcrumbs, salt and pepper. Cook this mixture for about 8-10 minutes until it starts to change color. Divide the mixture between the portobello mushroom caps. Place the pan in the oven and cook for 20 minutes. The bread crumbs will become crispy and brown.
