My son and I have movie night every week and we have popcorn. I told him we are going to try something new. Of course he loved it because it has caramel and chocolate on it. Not something we will do all the time, but it is a sweet treat.
INGREDIENTS
- 1/2 cup of popcorn, for popping
- 1/4 cup canola oil, for popping
- 1/2 cup sugar
- 1/4 cup corn syrup
- 1/4 cup water
- 1/2 cup chocolate chips, melted
In a pot add the canola oil and one kernel of popcorn. Put a lid on the pot and wait for the kernel to pop. Once it does you can add the rest of the popcorn. Put the lid back on and pop the rest. When it’s done put it to the side.
Now to make the caramel. Get a 2 quart pot and add the sugar, corn syrup and water. Cook on a medium high heat until it turns a light golden brown color.
Put the popcorn in the pot and stir it with a wooden spoon until it is evenly coated. Pour the popcorn onto a parchment lined baking sheet and let it cool. When it’s cooled, break up any clumps with your hands.
Put the chocolate and a small amount of milk in a glass measuring cup. Melt the chocolate at 30 second intervals and stir in between. You don’t want it to be hot, just warm enough to pour over the popcorn. Slowly pour the chocolate over the popcorn to cover it.
The only thing left to do is pick a movie and eat the chocolate caramel popcorn with someone you love.
