Usually you hear Chicken Parmesan or Eggplant Parmesan. I thought why not Pork Parmesan. I have to tell you, it was mighty good! What’s not to like? Fried meat with cheese and homemade sauce. Don’t forget the roll with garlic butter. Yum!
INGREDIENTS FOR PORK
- 2 boneless thick pork chops
- gluten free dairy free mozzarella cheese
- 2 eggs
- 1/2 cup gluten free flour
- salt
- pepper
- rolls
- margarine
- 2 cloves garlic
- gluten free dairy free rolls (Dr. Scharr)
INGREDIENTS FOR SAUCE
- 6 – 8 roma tomatoes
- 1 tablespoon extra virgin olive oil
- 1/2 teaspoon or so of salt
- 1 teaspoon sugar (add more if needed)
- 1/2 teaspoon basil
- 1/2 teaspoon parsley
- 1 clove garlic – chopped
This is a quick and simple sauce. Take the tomatoes and cut them in 1/4’s, put them into a ninja, and blend. Put them into a pot with the olive oil, salt, sugar, parsley, basil, and garlic. Cook for about 10 minutes.
First, I take the boneless pork chops and slice them in half. Put two beaten eggs in one bowl and the flour, salt, and pepper in another bowl. Dredge the pork chops in the flour, then the egg, and back in the flour again. The flour helps the egg stick and the egg helps the flour stick.
Put about 2 tablespoons of oil in a pan and heat over medium high heat. Fry them for about 3-4 minutes per side. Take them out and drain on a paper towel.
At the same time put the rolls in the toaster oven. Put the margarine and garlic in a measuring cup and place in the microwave for 1 minute. Cut open the rolls and brush them with the margarine and garlic.
Put a desired portion of mozzarella cheese on your pork chop. Place the pork chop on the roll and add sauce over the top. Put some extra sauce on the side for dipping and serve.
You now have a Pork Parmesan Sandwich.
