Stuffed eggplant makes an exceptionally satisfying meal, even eggplant stuffed with Beyond Beef. Traditionally you will see recipes where eggplant is stuffed with ground beef, vegetables, bread crumbs all mixed in, etc. This all sounds enticing, right? Now, imagine you are unable to have beef or you want to become vegan. You have to replace that beef with something else. A majority of vegan recipes use legumes in place of beef and this is a fantastic replacement for protein. Perhaps you are not quite ready to fully jump into the vegan lifestyle. Here is where Beyond Beef comes in.
What do you do when you can’t or chose not to eat beef anymore?
This was a question I pondered when diagnosed with cancer. My doctor told me I should think about going vegan. During treatment I was so wiped out that I did not have the energy to revamp my entire diet so quickly. After researching ways to stay cancer free going on a plant based diet popped up time and again. I found products by Beyond Meat and was impressed with the ingredient list, since it did not seem to have any fillers. Beyond Beef products have managed to replicate the taste and texture of beef. From here I started working on my plant based recipes and Eggplant Stuffed with Beyond Beef is only one of them.
INGREDIENTS – EGGPLANT STUFFED WITH BEYOND BEEF
- 2 small to medium eggplants
- 1 lb package of Beyond Beef
- 1 tablespoon olive oil
- 1/2 onion, chopped
- 2 cloves garlic, minced
- 1 tablespoon parsley
- 1/4 cup gluten free dairy free breadcrumbs
- 1/4 cup gluten free dairy free parmesan cheese
- 1 tablespoon tomato paste
- 1 can diced tomatoes
- salt
- pepper
- gluten free dairy free mozzarella cheese for the top
Beyond Meat products are gluten free and vegan, yeah! I can still enjoy the flavor and texture of beef without compromising my new diet.
Eggplant stuffed with Beyond Beef is a meal worth waiting for, so let’s get started.
Preheat the oven to 350 degrees. Line a pan with parchment paper.
Slice the eggplant in half lengthwise. Cut out the flesh, leaving about a quarter inch around the skin. Dice up the eggplant into quarter inch pieces and set aside.
Heat a frying pan over medium high heat and add a tablespoon of oil. Add the meat and cook for about 5 minutes. Break apart the meat to ensure the meat cooks at the same rate. Add the onion, salt and pepper, stir to combine, and cook for 3-4 more minutes. Add the diced eggplant, diced tomatoes, tomato paste, and garlic, cook another 4-5 minutes. Mix the breadcrumbs, parsley, and parmesan cheese into the pan and cook another couple of minutes.
Place the eggplant halves on the tray. Brush the inside of the eggplant with a little olive oil and season with salt and pepper. Fill the inside of the eggplant with the Beyond Beef mixture. Sprinkle mozzarella cheese over the top and bake on 350 degrees for 40 – 50 minutes.
