Seafood lettuce wraps make the perfect light lunch. If you are watching your calories, carbohydrates, or trying to eat heart healthy then this recipe is perfect. There are only simple carbohydrates because I skipped the bread. You simply fill the lettuce cup with crabmeat, tomatoes, and cucumber. For the final touch, add a little dressing for additional flavor.
Transocean products makes imitation crabmeat that is gluten free and tastes great. Recently I found a product called simply surimi and this one is made with natural ingredients. The one called simply surimi has all natural ingredients and it’s fantastic. I always try to use products that have the least amount if ingredients in them. This helps me avoid artificial ingredients and added fillers that are not needed. Furthermore, it usually causes me some sort of allergic reaction.
WHAT IS SIMPLY SURIMI? Simply surimi is real seafood made with Alaska pollock and all natural ingredients. It is made without using GMO’s, added phosphates, artificial color or flavor. It’s certified gluten free, all natural, certified sustainable by the Marine Stewardship Council, and holds the heart healthy seal by the American Heart Association.
INGREDIENTS
- Simply Surimi seafood by transOcean, gluten free
- 3 pieces of butter lettuce
- 1/2 cucumber, diced
- 8-10 grape tomatoes, cut half
DRESSING
- 1/4 cup olive oil
- 1 tablespoon dijon mustard
- 1 tablespoon white balsamic vinegar
- salt to taste
- 1 tablespoon lemon juice
- 1 plus tablespoons liquid sugar
- dash of pepper
Making Seafood Lettuce Wraps is quick and simply. As a result, your lunch will be on the table in minutes!
You can start by making the dressing. In a measuring cup add all of the ingredients listed, stir well, and set aside.
TIP: Using liquid sugar works better than granulated sugar. Granulated sugar does not dissolve well in a cold mixture.
Take the lettuce leaves, rinse them, and pat them dry. Next, dice up the cucumber, and cut the tomatoes in half. Place the lettuce leaves in bowl, overlapping them. Add the diced cucumber and tomato pieces in rows. Take a handful of the simply surimi seafood and put it in the bowl. Make it so each ingredient has it’s own place.
To make the seafood lettuce wraps, grab a piece of lettuce, add some seafood, cucumber, and tomato. Pick the filled lettuce wrap up and add some dressing.
Now just fold the sides in and enjoy this deliciously healthy lunch.
