Taco Stuffed Taters are simply a potato stuffed with taco seasoned meat, topped with cheese and sour cream. Normally I make taco meat and serve it over tortilla chips. My son recently got braces so chips are out! Potatoes go well with taco meat, cheese and sour cream so I thought why not stuff the potato with all of that goodness.
This recipe is plant based, vegan, gluten free, and dairy free.
INGREDIENTS FOR TACO STUFFED TATERS
- 1 lb Beyond Meat
- 1/2 can gluten free black beans
- 1/8 teaspoon cumin
- 1/2 teaspoon onion powder
- 1/2 teaspoon garlic powder
- 1 teaspoon paprika
- 1 teaspoon chili powder
- 1/4 cup ketchup
- 3-4 medium potatoes
- margarine
- salt
- pepper
- gluten free dairy free sour cream (Wayfare)
- gluten free dairy free shredded cheddar cheese (Daiya)
Making taco stuffed taters is just as easy as putting the meat over tortillas. There is one change and that is the potato.
The first thing you want to do is bake some potatoes like you are making potato skins. I microwave my potatoes, then cut them in half to let the steam out so they can cool. Once the potato is cool enough to handle, scoop out the inside leaving about a quarter inch of the potato. Rub some margarine around the inside of the potato and put under the broiler for about 8-10 minutes.
TIP: You want to brown them slightly and crisp them up. The potato is going to be the vessel for your taco meat, so you don’t want soggy taco stuffed taters.
While the potatoes are cooling, you can start making the taco meat mixture. Heat a frying pan, add a small amount of oil, and add the beef. Cook for about 3 minutes, breaking up the meat as you go. Next, put in some black beans. Finally, add the cumin, onion powder, garlic powder, paprika, chili powder, salt, pepper, and ketchup. Stir to combine and cook for another 2-3 minutes.
Now we are going to start putting together out taco stuffed taters. Line a tray with parchment paper. Place the potatoes on the tray, fill them with the taco mixture, top them with cheese and then put them under the broiler for about 5 minutes or until the cheese has melted.
Once the cheese has melted remove the taco stuffed taters from the oven. The only thing you have left to do is plate them and add some sour cream. You could also add some avocado on the side.
