French toast can still be thoroughly enjoyed on a gluten free dairy free diet. Who can resist bread dipped in egg, that is perfectly pan fried, and covered with syrup? Don’t forget the sprinkle of powdered sugar! The addition of berries cancels out the sugar right? Maybe you’re thinking it’s just another carb heavy breakfast meal with sugar on top. True, it’s all carbs, but the difference is in the taste and texture. Pancakes are soft and fluffy, while French toast is slightly crunchy on the outside and soft in the middle. This basic recipe is great for the novice cook.
The Origin of French Toast
This sweet treat actually dates back as far as the Roman Empire. Historians have found similar recipes with bread dipped in egg and milk. There was evidence of this type of recipe around the 14th century in Germany and France as well. The name French toast was used in England around the 17th century before the recipe came to the Americas.
In France, it is referred to as “pain perdue” which translates to lost bread. This dish was created to use up stale bread as nothing went to waste in a time when food was scarce.
INGREDIENTS
- 6 slices of gluten free dairy free bread
- 3 tablespoons margarine
- 3 eggs, beaten
- 1/4 cup almond milk
- 1/2 teaspoon vanilla
- powdered sugar
- cinnamon (optional) I do not use it because I am allergic
Making Basic French Toast
This is one of the easiest breakfast meals to make, so let’s make some French toast. You need one bowl and one pan.
TIP: Make sure the vessel you choose is large enough for your bread to lay flat. I use either a square or rectangular glass pan.
Put the eggs in a pie plate or square bowl and beat them. Add the milk and vanilla, then mix well to incorporate. If you want to use cinnamon add that to the bowl as well. You can add some regular sugar to the mix as well if you wish.
In a 12 inch frying pan, add margarine and melt over a medium heat.
Homemade bread is great because it can be cut to the desired thickness. Usually I cut it about a 1/2 to 3/4 inch thick. Store bought bread works fine as well. Take your bread and lay it in the egg mixture to coat, then flip it and coat the other side.
TIP: Don’t let the bread sit in the egg mixture too long or your French toast will be soggy.
Fry the bread until it is golden brown, then flip to cook the other side. Put in a plate and sprinkle some powdered sugar and syrup over the top. Sometimes a sprinkle a little turbinado sugar on top for a some crunchy texture. You can serve this dish with some fruit or nuts as well.
French toast can also be more decadent. One I especially enjoyed, made by Bobbie Flay on Foodnetwork, was more sophisticated for the intermediate cook. A French toast casserole with a crisp topping, I have to say it was nothing short of amazing! I will share it with you soon.
