Enchilada Casserole is a Mexican dish that is hearty and healthy. Everyone in the family will relish this meal if they take pleasure in eating Mexican food. If you want to save time, prepare the meat portion ahead, then assemble the casserole later. Busy adults, may want to assemble the whole thing ahead of time. Then all that remains is baking your meal.
What is an Enchilada?
Simply put, an enchilada is a corn tortilla rolled around meat and cheese. They can be made with a wide range of ingredients and topped with things like chili sauce, sour cream, more cheese, and guacamole. The enchilada dates back to the Mayan people, whose staple food was corn. Mexican immigrants have brought their culture to the U.S. and are now enjoyed by people of all walks of life. Enchiladas are simple and delicious!
INGREDIENTS
- 1 package of Beyond Beef
- 1 cup onion, chopped
- 2 cloves garlic, chopped
- 1 cup of GF vegetable broth
- 1 tablespoon paprika
- 2 tablespoons chili powder
- 1/4 teaspoon cumin
- 1- 1 1/2 tablespoons GF flour
- salt to taste
- 1 tablespoon margarine
- can of black beans
- 8 oz. tomato sauce
- 4 GF DF toritillas, 8 inch
- 1/3 plus, GF DF shredded cheese blend
- GF DF sour cream
DIRECTIONS
- Heat a large skillet over medium high heat, then add beef, onion, black beans, diced tomatoes, paprika, chili powder, cumin, and salt.
- Heat a medium pan over medium high heat, then add margarine, and garlic. Cook for 3 minutes, then add flour tomato sauce, and broth. Bring to a boil and cook for an additional 2 minutes. Reserve 1/2 cup of the sauce for later and pour the rest in the beef mixture. Stir to combine.
- Preheat oven to 400 degrees F.
- In a pie plate or other dish that is somewhat deep, place the first tortilla. Top with one cup of beef mixture, then a layer of cheese. Repeat the layers, ending with a tortilla on top. Spread the reserved sauce over the top, add some cheese, then bake for 10 minutes or until the cheese is melted.
You can change the ingredients to what works for you. For example, substitute chicken or turkey for the beef. You can leave out the beans or add jalapenos. Either way enchilada casserole is healthy, satiating, and can be made ahead of time.
Cut the enchilada casserole in slices like a pie, place on a plate, add sour cream on top, then serve.
