Black Bean Soup will not only warm you up during these cold winter days, it will supply you with a multitude of health benefits. When you blend the black beans they become sooth and creamy. Additionally, spices such as, chili powder, cumin, and garlic bring the dish to life. If you want some additional spice, add some jalapenos. There’s a reason these legumes are a staple of Latin American and Caribbean cuisine.
Black beans on their own aren’t very flavorful or appealing to most people. Perhaps this is why some people opt to leave them out of their diet. It’s definitely worth considering adding legumes to one’s diet, just for the health of it.
Why You Should Add Black Beans to Your Diet
These beans make a great addition to any diet for several reasons. In addition to being packed with nutrition, they offer many other health benefits. Legumes in general, help to control blood sugar levels and reduce the risk of certain chronic diseases like heart disease and type 2 diabetes.
Furthermore, legumes are rich in antioxidants, plant-based protein, fiber, and several vitamins and minerals. Given the amount of nutrition they offer, they make a great addition to your diet.
INGREDIENTS
- 4 cans of black beans, drained and rinsed
- 1 tablespoon lime juice
- 2 tablespoon olive oil
- 1 large sweet onion, diced
- 1 cup of shredded carrots
- 4 – 6 cloves garlic, chopped
- 3 1/2 – 4 cups of vegetable broth
- 1/4 – 1/2 teaspoon cayenne
- 1 tablespoon ketchup
- 1 teaspoon coriander
- avocado, sliced (garnish)
- jalapeno diced (garnish)
- shredded cheddar (garnish)
DIRECTIONS
- Dice up the onion and garlic, then set aside.
- Heat the olive oil in a large pot over medium heat. Add onion, garlic, carrot, then cook until tender. About 8 minutes.
- Add broth, beans, spices, and ketchup, then bring to a boil. Reduce heat to a simmer and cook for 10 minutes.
- Use an immersion blender to break everything down and thicken. You may also use a blender.
- Stir in the lime juice.
- Put the soup in bowls and garnish with cheese, avocado, and jalapeno.
