Looking for a new way to enjoy sweet potatoes? Look no further, these nacho style sweet potatoes are a spin off of traditional nachos. This dish is packed full of flavor, nutrients, protein and fiber. It may not appear to be a substantial meal, but it’s nutrient dense and incredibly satisfying.
Replacing the tortilla chips with sweet potato fries converts this into a healthier version of nachos for two reasons. You replace the tortilla chips with sweet potatoes and there is no ground beef. This will reduce your fat content by a good amount. Tortilla chips are considered unhealthy because they are fried, high in fat, and also high in sodium. If you are looking to find recipes that will fulfill your protein quota without animal protein, then this is a great start.
INGREDIENTS
- 2 medium sweet potatoes or sweet potato fries
- 1 can black beans, drained and rinsed
- 1 can corn, drained
- 1/2 can tomatoes and chilies
- 1 cup shredded cheddar cheese, gluten and dairy free
- sour cream, gluten and dairy free
- 1 clove garlic, minced
- 2 tablespoons lime juice
- salt
TIP: Making sweet potato fries with the air fryer reduces the amount of oil if you are making them from scratch.
DIRECTIONS
- Preheat the oven according to the bag or air fryer to 380 degrees Fahrenheit.
- First thing you want to do is either put some store bought sweet potato fries in the oven or make your own. If you make your own an air fryer works best. Cut the sweet potato in half then lengthwise into strips. Put them in a bowl and coat with 1 tablespoon of olive oil, salt, then place them on the air fryer tray.
- Once the air fryer or oven is ready put in the fries. I use an air fryer and cook them at 380 degrees Fahrenheit for 15-20 minutes.
- While the sweet potatoes are cooking heat 1 tablespoon of olive oil in a pan over medium low heat. Add the black beans, corn, 1 tablespoon lime juice, garlic and salt, then saute for 5 minutes.
- When the potatoes are done, place them on a oven tray lined with foil or parchment paper. Put the beans and corn mixture over the sweet potatoes, then add the tomatoes and chilies on top of that. Add a layer of shredded cheese over that, then bake at 350 degrees Fahrenheit until the cheese is melted.
- In a bowl mix together the sour cream, 1 tablespoon lime juice and some salt.
- Put a serving of the nacho style sweet potatoes on a plate, then drizzle the sour cream mixture over the top.
You won’t believe how satiated you will feel after devouring a plate of nacho style sweet potatoes. It has just the right amount of lime juice to bring it all together. I hope you enjoy this meal as much as my family.
