I have to admit, when I first came across recipes for a chickpea salad sandwich I was a little hesitant. Chickpeas are delicious, but I never thought of making them into a sandwich. Perhaps, people comparing it to a chicken salad sandwich threw me off. In spite of all that, I decided to make my version and try it for myself. Result, undoubtedly amazing flavor and totally satiating.
Having and beating cancer has led me to investigating plant-based, whole food plant-based and vegan diets. Not only am I cancer free, but this diet has resolved other chronic issues I suffered from. In fact, my joint pain is gone and my allergies are significantly reduced. My energy has increased and I feel fantastic. This all led me to becoming a nutrition coach and becoming a specialist in plant-based nutrition.
CHICKPEAS
- High in protein
- High in fiber
- Low in calories
- Low in fat
- Good source of other vitamins and minerals
- May help with blood sugar levels
- May be beneficial to gut bacteria
INGREDIENTS
- 1 can of chickpeas
- 1/4 teaspoon salt
- 1/8 teaspoon pepper
- 1 tablespoon olive oil
- 1/2 – 1 tablespoon garlic powder
- 2 tablespoons Dijon mustard
- 1/4 cup mayonnaise
- 1 teaspoon coriander
- 1 tablespoon lemon juice
- 2-3 scallions
- butter lettuce
- tomato slices
- GF baguette or 2 slices of GF bread
DIRECTIONS
- Drain the chickpeas, then rinse three times. Place in bowl, then add olive oil, salt, pepper, and garlic powder.
- Heat a pan over medium heat, add chickpeas, and cook for 5 minutes, or until darker in color.
- Remove chickpeas from the pan and place in a bowl. Mash the chickpeas, than add coriander, mustard, mayonnaise and lemon juice. Combine thoroughly, then add sliced scallions.
- Toast bread, then add lettuce, tomato, and chickpea salad.
- Serve with a pickle, olives, or cucumbers.
Honestly, this is one of the most enjoyable sandwiches I have had in a while. As a nutrition coach and cancer survivor this recipe is a definite must for a plant-based diet. This sandwich is healthy, but also budget friendly.
