Making homemade garlic mayonnaise from scratch is easy and it tastes incredible. It may sound intimidating because the mixture could break. However, all you need is a little patience and seven ingredients.
After getting reactions to any mayonnaise I tried, I decided to make my own. I came across a recipe from Gordon Ramsey and I just made a few changes. If you have food reactions, making your own mayonnaise is also a good choice.

TIPS TO ACHIEVE THE BEST RESULTS
- It is imperative you drizzle the oil slowly for the first thirty seconds. This step is crucial in order to keep the mixture from splitting, as the eggs and oil need to emulsify.
- Always season the mayonnaise at the end, otherwise it will destroy the egg yolks.
INGREDIENTS
- 3 egg yolks
- 1 teaspoon mustard
- 1 cup neutral oil, avocado
- 1/2 lemon, juiced
- salt
- pepper
- 2 cloves garlic (optional)
DIRECTIONS
- Add three egg yolks and the mustard to a mixture, then start to blend.
- Slowly begin to add the oil, until the mixture begins to thicken. THIS IS IMPORTANT FOR IT TO MIX PROPERLY
- Now you can begin to add the oil a little faster.
- Next, add the lemon juice, salt, pepper, and garlic. Give it a quick mix and you’re done.
- Refrigerate immediately. It will keep for several days.
The end result, is a rich creamy delicious mayonnaise that everyone will enjoy. Mayonnaise has so many uses. For example, slather on sandwiches, binding ingredients together, making aioli, making dressing, etc. Furthermore, it is a very versatile condiment.
