Since going on a plant-based diet I have been wanting fajitas. After a lot of thought and seeing how versatile mushrooms are, I decided to make oyster mushroom fajitas. I choose oyster mushrooms because they hold their shape. Additionally, they do not become mushy when you marinate them.
Why Oyster Mushrooms?
Oyster mushrooms deliver an abundance of nutrients that can help maintain your health. Clinical trials show the effects of consuming oyster mushrooms on cardiometabolic diseases such as diabetes mellitus type 2 (DMT2), dyslipidemia(high cholesterol), hypertension and obesity in a pubmed article. It states, “oyster mushrooms deliver various bioactive compounds such as β-glucans(soluble fiber), which may improve cardiometabolic health.”
My most significant reason for eating oyster mushrooms is the evidence states mushrooms help to prevent breast cancer. Maybe that’s why they are the second most cultivated edible mushroom worldwide. As a breast cancer survivor this information is important.

OYSTER MUSHROOM MARINADE
- box of oyster mushrooms
- 1/3 cup olive oil
- 1/4 cup white balsamic vinegar
- 1 tablespoon garlic powder
- 2 tablespoons agave
- juice of one lime
- salt
- pepper
DIRECTIONS
- First, add the oil, vinegar, garlic powder, agave lime juice salt, and pepper in a container for the marinade, then stir well.
- Cut the mushrooms in lengthwise slices, then add them to the marinade. Mix thoroughly, then refrigerate for several hours.
BLACK BEAN HUMMUS
- 1-1 1/2 tablespoon olive oil
- can of black beans
- 2 cloves garlic
- 1/4 teaspoon salt
- 1 1/2 tablespoons lime juice
- 1/4 teaspoon cumin
- 1/4 teaspoon cayenne pepper
OYSTER MUSHROOM FAJITAS
- mission soft tortilla shells GF
- lettuce leaves
- onions, sliced
- mini sweet peppers, strips
- cherry tomatoes, halved
- mini sweet peppers, strips
- avocado, sliced
- GF DF shredded cheddar
DIRECTIONS
- Drain the beans, then rinse two to three times.
- Peel the garlic and give it a rough chop.
- Place all the ingredients in the blender and mix until mostly smooth
DIRECTIONS
- First, cut up all vegetables, then set aside.
- Heat a pan with 1 tablespoon olive oil, then add the onions and peppers. Cook until onions are caramelized. Remove from the pan.
- Add mushrooms to a pan and cook for about 5-6 minutes.
- Heat a pan over medium low for the shells. Cook them about 30-60 seconds per side, then wrap in foil to keep warm.
- Place some black bean hummus on the bottom, add marinated mushrooms, onion, tomatoes, lettuce, avocado and finally cheese.
Now it’s time to enjoy this GF, DF, V, plant-based meal. Oyster mushroom fajitas are filling and busting with nutrition.
