Pasta Cacio e Uova is a silky, smooth Italian pasta dish made with cheese and egg. It may not sound like anything spectacular, but when the egg and cheese combine it creates a rich, creamy sauce that is absolutely divine. I fell in love with this dish the first time I tried it.
Cacio e Uova simply put, means cheese and egg. It’s similar to a carbonara, however, it is meatless. The eggs add an irresistible richness to the sauce. When the eggs and cheese meld together you have Italian comfort food!
INGREDIENTS – Pasta Cacio e Uova
- 2 large eggs
- 1/2 cup gluten free dairy free parmesan cheese (Follow Your Heart)
- 8 oz. gluten free pasta
- 2 tablespoons margarine
- 2 cloves garlic, smashed
- handful of fresh parsley, chopped
- 1/2 cup gluten free dairy free seasoned breadcrumbs (optional)
This recipe can be made vegetarian by using an egg substitute like just eggs.
DIRECTIONS
- Boil just enough water to cover the pasta, salt water heavily.
- In a measuring cup whisk eggs, cheese, salt and pepper.
- Add pasta to boiling water and cook until “al dente,” cook 1 minute less than recommended time.
- In a large skillet, add margarine and garlic. Once the margarine has melted, allow the garlic to sizzle for a few minutes to infuse flavor, then discard garlic.
- Drain pasta, reserving 1 cup of pasta water. Add pasta to the skillet with the margarine and stir to combine.
- Add 2 tablespoons of pasta water and stir. Next, add the egg and cheese mixture and stir quickly until the sauce becomes silky and smooth. Add pasta water as needed. (I only used 3 tablespoons.
- Put a tablespoon of margarine into a small pan, add the breadcrumbs, cook for about 5 minutes to crisp them up.
- Plate the Pasta Cacio e Uova, then top with breadcrumbs and parsley.
The breadcrumbs on top are optional, however, they add a some texture and crunch to the meal.
Pasta Cacio e Uova can be served this with a side salad, fried eggplant, or whatever else you feel goes with this dish. You can also consume this meal alone, due to the fact that it is so comforting and decadent.
