Vanilla Chocolate Chip Cake With Chocolate Glaze
I am going to show you how to make a quick gluten free dairy free vanilla chocolate chip cake in the microwave.
You can make it in a coffee cup or something a little larger if you wish. Today I made this cake for my 11 year old in the microwave! It is so quick and easy that you won’t believe it.
All you need is a gluten free boxed cake mix and the ingredients listed that you have to add. I used a boxed gluten free cake mix from Wegman’s.

Instructions for vanilla chocolate chip cake
Simply follow the directions on the box and then add gluten free dairy free chocolate chips. First you will put half the cake mix in a mixing bowl. Then add the egg and melted margarine. You need to take your gluten free dairy free chocolate chips and coat them in the rest of the cake mix so they will not sink to the bottom of the batter. Next, fold them into the mix. Put the cake mix into a microwave safe mug or small bowl. I used half of the cake mix so it only took about 3 minutes to cook. Once it is done you can flip it out of the bowl onto a plate.
Chocolate Glaze Ingredients
1/4 cup of gluten free dairy free chocolate chips
2 tablespoons Smart Balance
Instructions
I put about a 1/4 cup of gluten free dairy free chocolate chips in a glass measuring cup and added about 2 Tbsp of smart balance to it. The margarine helps to keep the chips smooth and glossy looking. I melted the chocolate chips in the microwave and stirred to smooth them out. Then you just have to pour this over the top of your cake and spread it out until it drips down the sides. In about 3 minutes you have this quick decadent cake! Make sure you get a piece because it will not last long!
