I have to tell you almond flour biscuits are soft and tender! They are so much better than biscuits made with gluten free flour. Almond flour tends to keep the biscuits moist, unlike ones made with traditional gluten free flours.
Why almond flour biscuits?
I was looking for a way to cut down on my carbohydrate intake, so after some research I decided to try making some bread products with almond flour. Most of the recipes I found for almond flour biscuits were from a keto diet, which use almond flour and coconut flour.
I bought both types of flour and started experimenting. After a few modifications to the recipes I came up with one that was to my liking. Keto recipes either use a sugar substitute or no sugar at all. I understand why, but I like a little bit of all natural sweetness.
Time to make the biscuits
Let’s get down to business and make some almond flour biscuits!
You only need 7 ingredients and about 20 minutes of time.
Preheat the oven to 350 degrees.
INGREDIENTS
- 2 cups blanched almond flour
- 2 teaspoons gluten free baking powder
- 1/2 teaspoon salt
- 2 eggs, beaten
- 1/3 cup gluten free dairy free margarine, melted
- 1 teaspoon xanthan gum
- 1 tablespoon of gluten free honey
Get a baking sheet ready by putting parchment paper down. Get out a mixing bowl and get ready to make your new favorite biscuits. Aka, almond flour biscuits!
Add flour, baking powder, xanthan gum, and salt to the bowl and stir together. Beat 2 eggs in another bowl and mix them into the dry ingredients. Melt the butter and add to the bowl. Last, add the honey for a touch of natural sweetness. Be sure not to over mix the batter.
Since these are drop biscuits, there is no rolling dough or cutting anything out. Just grab a big spoon and drop the almond flour biscuits onto the baking sheet. Put them into the oven and bake for 15 minutes.
Okay, now that they’re done, you need to cut one open, put some margarine on it, and enjoy the wonderfully moist biscuit.
