My kids always want dessert and I try no to deprive them of that. I love dessert as much as anyone, but since I got diagnosed with cancer I keep my sugar to a minimum. However, every once in a while you need to indulge, and tonight is treat night. Chocolate cake with pecans and chocolate sauce is just sweet enough to satisfy my sugar craving.
I used a boxed cake mix because it was quick. You can absolutely make a cake from scratch.
INGREDIENTS
- gluten free vanilla cake mix
- 2 tablespoons cocoa
- pecans, chopped
You can use another type nut if you do not like pecans. Almonds, hazelnuts, or macadamia nuts would also be great with chocolate cake.
Preheat the oven to the temperature on the box. Grease a loaf pan with margarine for the cake. Follow the directions on the box of cake mix and add the cocoa to it. You can incorporate some pecans into the cake mix if you wish. I have one son who cannot eat nuts, so I put them on top.
Let the cake cool and pop it out of the pan. While the chocolate cake cools make the sauce.
Chocolate Sauce
- 1/2 cup gluten free dairy free chocolate chips
- 1 -2 tablespoons gluten free dairy free margarine
- 1 plus tablespoons almond milk
The chocolate sauce is quick, easy, and necessary to for that little extra something.
Put the chocolate chips,1 tablespoon margarine and milk in a microwave safe cup. Heat for 30 seconds at a time and stir in between. If you need to thin it out add a little more margarine. When the sauce is smooth it’s done.
Slice the chocolate cake, place some chopped pecans on top for a little crunch and drizzle some chocolate sauce over it. If you really want to give it a little more, add some whipped topping.
