I hate throwing away food, so I always try to create something new with what is in the refrigerator. What can you make with left over rice and broccoli? It depends on what you have to work with. I found some tortillas and some shrimp. Okay, I am making shrimp tacos with broccoli, rice and mozzarella cheese.
This dish will come together very quickly because some of the ingredients are already cooked. You really only need to cook the shrimp and warm the rice and broccoli.
Even if you had to cook the rice and broccoli it still would not take long to make shrimp tacos. You can use minute rice that you boil in the bag and broccoli in a steamer bag.
INGREDIENTS
- 5 shrimp per taco
- broccoli
- rice
- garlic, grated
- 1/2 -3/4 cup gluten free dairy free mozzarella cheese
- gluten free tortilla shells (mission makes good ones)
You can use frozen or fresh shrimp to make shrimp tacos. Obviously fresh always tastes way better.
Wrap the tortillas in foil and put them in the oven at 350 degrees for 15-20 minutes to warm them.
Season the shrimp with salt and pepper, put them in a pan with some olive oil and cook for about 2-3 minutes per side.
In a separate pan put a little margarine with the broccoli rice mixture. Mix in some cheese and melt. Heat this up for a couple of minutes.
Take the tortilla shell, put a layer of the broccoli, rice, and cheese mixture down the middle. Place 5 shrimp on top of this mixture. Grate a little fresh garlic on top, fold in the sides and eat. Delicious shrimp tacos make with some leftovers.
Bottom line, don’t throw away your leftovers, recreate them into something else. You just need to be creative!
