Summer is here and it’s time to fire up the grill! Easy Grilled Vegetables are on the menu for today. Making corn on the cob, red potatoes, green zucchini, and yellow squash on the grill. Despite what you may think, grilling vegetables requires very little effort.
Vegetables off the grill have a plethora of health benefits. Most importantly, you don’t get potentially cancer-causing compounds like PAH’s and HCA’s. Polycyclic aromatic hydrocarbons (PAHs) and heterocyclic amines (HCAs) are chemicals formed in meat when it is cooked at high temperatures. Not only do grilled vegetables taste phenomenal, they possess those beautiful grill marks. Each vegetable has its own unique flavor profile. For example, onions caramelize and become sweeter. On the other hand, potatoes become crisp on the outside and stay soft on the inside.
You can make easy grilled vegetables by simply adding olive oil, salt and pepper. It doesn’t get any easier than this. BONUS – no clean up!
INGREDIENTS
- red potatoes
- green zucchini
- yellow squash
- corn on the cob
- vidalia onion
- olive oil
- salt
- pepper
DIRECTIONS
- Preheat the grill to about 500 degrees
- Prepare the vegetables.
- Cut the potatoes and onions in half and zucchini and squash get cut in quarters lengthwise. Remove the silk from the corn, but the husk on.
- Lay the vegetables on a pan then pour a small amount of olive oil over top. Rub the oil over the vegetables to coat.
- Sprinkle salt and pepper over the vegetables, put them on the grill and cook for 8-10 minutes. Flip then cook another 8-10 minutes or until tender.
- Rotate the corn every 5 minutes for about 20 minutes. Leave corn in the husk until you are ready to eat it. Serve with margarine.
- Remove from the grill and serve.
