Garlicky green beans make the perfect side dish for anytime of the year. It only takes about 6 minutes to get them together. Only four ingredients needed – extra fine green beans, olive oil, garlic and salt. Extra fine green beans are great because they cook quickly. They are tender and flavorful when made this way.
Pairing the green beans with rice makes it a complete protein, which is an added bonus. If you follow any type of plant based diet making sure you eat complete proteins or combine foods that create them as this is especially important for good health. Green beans and garlic each offer tons of antioxidants to help keep you healthy. This makes garlicky green beans a winning side dish.
As a cancer survivor I know how important it is to eat foods that destroy free radicals. Free radicals are unstable atoms that can wreak havoc on our bodies. When they try to bond to other molecules it can cause oxidative stress. Oxidative stress damages your cells and this can lead to disease.

Green beans are full of antioxidants, such as, vitamin C, quercetin, flavonols, and kaemferol. These antioxidants fight free radicals by reducing cell damage. Although we may not be able to avoid free radicals completely, we can eat foods that help to decrease our risk of disease.
INGREDIENTS
- bag of extra fine green beans
- 3 cloves garlic, minced
- 2 tablespoons extra virgin olive oil
- salt, to taste
DIRECTIONS
- Heat a pan with a little olive oil over medium heat. Once the pan is hot, add the green beans, then stir to coat. Cook for 4 minutes.
- Mince the garlic and set aside.
- Once the green beans are done remove from the pan immediately and put in a serving bowl.
- Add olive oil, garlic, and salt to the bowl, then mix thoroughly to coat the beans.
If you’re not a garlic lover, you can add hot pepper flakes, lemon juice, or even some sliced almonds.
Garlicky Green Beans can be served hot or cold, so it can be made ahead of time. Even though this side dish is simple, it’s loaded with nutrition and antioxidants.
