With the cooler weather ahead and Thanksgiving around the corner I make a lot of soup. My family often has soup before our Thanksgiving meal and Italian sausage soup is one of my favorites. On a cold winter day it makes a gratifying meal because it’s a tomato based soup filled with sausage and pasta. Add some bread and butter and all is good!
This soup was not a vegan recipe originally, but I have revamped it because I am trying to eat healthier after a bout with cancer. A plant based diet is shown to be a great place to start if you’re looking to reduce your risk of diseases, such as cancer, diabetes, cholesterol, etc. Like all diets, it has its pros and cons. You should always consult your physician or a nutritionist before starting a new diet.
If you are not vegan you can use any Italian sausage you wish. Also, you can use chicken broth instead of vegetable broth. It is delicious either way.
INGREDIENTS
- olive oil
- 1 medium onion, chopped
- 1 cup of celery, chopped
- 2 cloves garlic, minced
- 1 can crushed tomatoes
- 3 cups vegetable broth
- 1 package beyond sausage, loose
- 1 teaspoon oregano
- 2 tablespoons parsley
- 1 – 1 1/2 teaspoons basil
- 3 tablespoons sugar
- 1/2 teaspoon thyme
- 1 cup GF Delallo orzo pasta
- Gluten free dairy free Parmesan cheese
Making Italian Sausage Soup
Take sausage out of casing. Heat a frying pan with a small amount of olive oil and add sausage. Brown the sausage breaking into pieces as you cook it, then drain.
Heat up a big soup pot over medium low heat with a tablespoon of olive oil. Add the celery, onion, and garlic, then saute until tender. Add crushed tomatoes and cooked sausage. Cook for about 10 minutes. Add vegetable broth, spices, and sugar. Simmer for 30 minutes. Add the pasta and cook until it’s tender.
Spoon Italian sausage soup into bowls, sprinkle parmesan cheese on top. You can put a couple of fresh basil leaves on top as well. Serve with bread and butter.

I believe that avoiding prepared foods is a first step for you to lose weight. They may taste good, but highly processed foods include very little nutritional value, making you feed on more just to have enough vigor to get throughout the day.
