Is anyone else craving Thanksgiving food? I have a turkey meatloaf recipe that tastes like Thanksgiving all in one delicious bite. I didn’t want to cook a whole turkey in the midst of summer, so I opted to create a meatloaf that had almost all the fixings in one bite. It was tender and full of Thanksgiving flavor!
If you feel like having a Thanksgiving meal without all the prep then turkey meatloaf is the way to go. It comes together quickly, smells divine while it’s cooking and tastes like a Thanksgiving meal. I suppose you could also put dried cranberries into the mix for the cranberry sauce.
INGREDIENTS FOR TURKEY MEATLOAF
- 1 lb ground turkey, gluten free
- 2 slices of gluten and dairy free bread, cubed
- 1/2 onion, chopped
- 1/2 teaspoon celery salt
- 2 cloves garlic, diced
- 2 eggs
- 5 tablespoons margarine
- pepper
- 2 cubes vegetable bouillon, grated
- desired amount of dried cranberries (optional)
- 3 vegetable bouillon cubes
- 3 cups water
Preheat the oven to 350 degrees Fahrenheit.
Get out a loaf pan to cook the turkey meatloaf in.
Take the slices of bread and cut them into cubes. In a large bowl add the ground turkey, bread, onion, celery, garlic, eggs, margarine, and pepper. Take 2 bouillon cubes and grate them up into the mix as well. Add the dried cranberries if you would like them in the meatloaf. With your hands mix to combine all the ingredients.
Take the turkey meatloaf mixture and put it into the loaf pan. Place the pan in the oven and cook for about 50-60 minutes.
While the meatloaf is cooking you can start on the gravy. In a small pot add 3 cups of water, 3 vegetable bouillon cubes and 3-4 tablespoons cornstarch. I add all this together and stir well before heating to avoid getting clumps. Bring this to a low boil over medium heat until it thickens, about 1 minute. Take it off the heat and set to the side. You can simply heat it up when the turkey meatloaf is done.
Take the turkey meatloaf out of the oven and let is sit for about 5 minutes. Turn the meatloaf out onto a tray. Flip it over so the top of the loaf is showing. Slice into pieces 1 inch thick and top with gravy. Place the additional gravy on the table in case someone wants more.
