Although this recipe is not new to us, I know what flavors they like and I can try to expand their palates from there. I can experiment by changing up some flavors. I always tell them, just try it. You don’t know if you like unless you try it. Once they tried nachos, I made some other Mexican recipes for them to try. I am very fortunate that my family is willing to try new recipes. If they don’t like I will know immediately.
Nachos are one of my 12 year old’s favorite Mexican dishes, so I make them often. Tortilla chips with melted cheese on top is a snack he makes for himself. Both my boys like fajitas, tacos, enchilada casserole, just to name a few.
Nachos make a great appetizer or you can make a meal out of them. They are always a hit at a super bowl party or a New Years Eve party. It is a low cost recipe to make and you can add what toppings you want. There is a traditional way to make them, but you can change things to make it your favorite.
INGREDIENTS FOR NACHOS
- gluten free tortilla chips
- 1 lb of 80/20 ground beef
- 1 teaspoon cumin
- 2 tablespoons chili powder
- 1 tablespoon paprika
- 1 tablespoon garlic powder
- 1/2 medium onion – chopped
- can of olives
- salt
- pepper
- chipotle – to add some spice (optional)
- 1/8 cup ketchup
- gluten free dairy free sour cream
- gluten free dairy free cheese
- salsa on the side
Preheat the oven to 200 degrees. When it is up to temperature, put a pan of tortilla chips in to warm them up.
The first thing I do is heat a frying pan, put in the ground beef and start browning it. While it’s browning, add salt, pepper, garlic powder, paprika, chili powder, and cumin. Add the ketchup and mix it in. Taste the nacho mixture to see if it is seasoned to your taste.
Take the tortilla chips out of the oven, put them on a platter, and start to assemble the nachos. Put the meat on top of the tortilla chips. Next, add the onions, olives, and any other topping you may want. Finish them off by topping the nachos with cheese. Get out two small bowls, put salsa in one and sour cream in another.
Serve the nachos by themselves or as part of a meal.
