INGREDIENTS
- 2 boneless pork chops
- 1/2 bag spinach
- 10-12 mushrooms
- 2 garlic cloves
- salt
- pepper
You can cook the pork chops on the grill or in a grill pan indoors. I brush a little olive oil on the pork and then add salt and pepper to season the meat. They will only take about 5-6 minutes per side. Remove the pork from the pan, set aside and let it rest for 10 minutes. Grate a clove of garlic over the top of the pork chop.
In a separate pan, add some olive oil and the sliced mushrooms. Cook them for about 10 minutes until softened. Add the spinach and cook for a few more minutes until it is wilted.
Put the mushrooms and spinach on the bottom of the plate and place the garlic covered pork chop on top. If you enjoy the flavor of fresh garlic you will like this dish. This allows you to experience the pungent, spicy side of garlic.
